If you want to store the precious supply of vitamins they offer, you have to wait the full maturation and after the first frost when the cold has made soft the pulp and you’ll be able to prepare delicious jams and other preserves.
To appreciate the taste of rose hips, collect them when they are mature, get rid of the stem and press lightly with your fingers the berries to let their red/orangish pulp out. You can use the pulp to prepare a great remedy against cough and flu.
Moreover, did you know that the Rose hips berries are a symbol of hope for a better and more peaceful life and of  peace?!
